Guessing the demand for your beef supply three to four years out is next to impossible. When trying to solve our own problems, we realized this was an industry issue.

 

With the goal of creating a fair and efficient marketplace to help Wagyu beef companies manage supply and demand, our sister company, Meatworks of Kansas created the first ever US Wagyu Carcass Grid that establishes buying and selling prices of Wagyu beef based on Digital Marbling Percentage (DMP), the primary driver of Wagyu beef quality.

SELLER'S GRID

When you utilize Meatworks of Kansas for processing, you are provided MIJ grading data three to five days after slaughter that establishes the BCW grade. Based on the grade and current demand for your product, we may contact you with the opportunity to sell the carcass to Booth Creek Wagyu based on the Hot Carcass Weight (HCWT) $ Per Lb pricing* using our "Seller's Grid."

BUYER'S GRID

When you have demand for product that exceeds your immediate supply, let us know and we will put you on the list for next available carcasses. These carcasses are also purchased based on the Hot Carcass Weight (HCWT) $ Per Lb pricing* using our “Buyers Grid,” and then processed to your specifications by Meatworks of Kansas.

SUBPRIMAL BUYER'S GRID

When you run low on supply of specific cuts, you're able to utilize our "Subprimal Buyers Grid" to purchase graded Fullblood or F1 Wagyu beef subprimals.
